# 风味黑椒牛柳
## 主料
牛肉、圆葱、青椒、红椒
## 配料
盐、糖、苏打粉、黑胡椒、酱油、料酒、耗油、蛋清、生抽、葱、姜、蒜、植物油
## 步骤
1. 牛柳切条(恒切),刀拍断筋;
2. 放苏打、盐、糖、黑胡椒、油、酱油、蛋清、料酒(可用白醋或白醋+白酒替代、耗油、淀粉、少许圆葱腌制10分钟以上
3. 葱、姜、蒜、李锦记蒸鱼豉油、风味豆豉酱(或黑椒酱)、白糖、淀粉调成酱汁;
4. 热锅凉油(多放油),滑炒牛肉,变色即可出锅,否则口感老;
5. 油锅翻炒圆葱,圆葱透明即可;
6. 放入牛肉,调好的酱汁,翻炒;
7. 放入青椒红椒丝,翻炒,放生抽调色,撒入黑胡椒粉,出锅。
