# 油焖大虾
## 主料
对虾
## 配料
葱、姜、蒜、洋葱、盐、糖、料酒(醋 或 醋+白酒代替)、番茄酱、耗油、啤酒(可用白水替代)、植物油
*PS喜欢颜色深的可以加生抽。*
## 步骤
1. 虾洗净,后背开口取出虾线,剪去虾须;
2. 葱、姜、蒜、洋葱切碎,取一半与虾腌制 20min 以上,并放入料酒、盐;
3. 热锅凉油,放入葱绿,油热后放入腌制好的大虾煎炸,变红起酥后捞出大虾(可以多放些油,并按压虾头,煎出的虾油特别香,可用于炒饭);
4. 清出锅后,入新油,放入另一半葱、姜、蒜、圆葱,放入番茄酱(爱吃酸甜口多放,否少许)、糖,炒香后倒入大虾,爆炒,放入耗油(或老抽);
5. 放入啤酒,入白水,大火焖烧,收汁即可(喜欢汤汁,要拌饭的多留些汁)
