- remove useless Kconfigs
- remove SPI DW kconfigs, we now use QMSI driver
- Cleanup readme and turn into ReST

Remove the CONFIG_SENSOR_DEBUG as it is no longer needed since switching
to SYS_LOG_* in the sensor susbsystem.
Also, use __ASSERT where CONFIG_SENSOR_DEBUG was used to validate
function parameters.
