sim: change MCUBOOT_OVERWRITE_ONLY_FAST usage 

Remove `MCUBOOT_OVERWRITE_ONLY_FAST` from overwrite-only upgrades, to
make it compatible with `large-write` tests after the latest changes
to the fast overwrite code; make it default when bootstrapping.
